Composition

Natural floral honey is roughly: carbohydrates — 79%, water — 17%, proteins and vitamins — 3%, minerals — 1%. It carries many bioactive compounds (vitamins C, H, K, beta-carotene, amino acids); absorption by the body is easy.

Color, taste, and facts

Freshly extracted honey is light; as it crystallizes it darkens to mustard–amber, and a thin white glucose layer may form on top — that is normal, not spoilage.

Genuine honey stretches in a thread from a spoon or toothpick, dissolves in the mouth, and lightly tingles the throat. Overly pale or “too cheap” honey often contains sugar; very dark honey can be remelted old stock.

How to choose and store

Contraindications

With pollen allergy, diabetes, or strict sugar limits, honey may not be suitable. If in doubt, a drop is tested on the wrist. During pregnancy or breastfeeding — only after consulting a doctor.

For the curious: wintering bees and feeding

Sunflower and floral honey crystallize quickly, so they are often not left as winter feed — another feed or sugar syrup is given so the colony survives the frost. For the buyer the point is different: with proper wintering, the jar receives ripe honey without leftover “extra” sugar in the product.
